The Best Gluten, Dairy, Corn, Soy Free Pancakes

One thing I missed about changing my diet, was pancakes. So…I now have a recipie that is yummy and easy. Give it a try.

  • 2 cups rice flour
  • 1 cup garbonzo bean flour
  • 1 cup tapioca flour
  • 1 cup coconut sugar
  • 1/2 tsp baking soda
  • 2 eggs
  • almond milk or other milk of choice (start with a cup)
  • coconut oil (used to oil the griddle)

Mix dry ingredients together. Stir in eggs and milk. The amount of milk is dependent on how thick you like your pancakes. If you like them thicker, use less milk. If you like them more like crepes, more milk.

Pour batter onto a hot, oiled griddle (you may need to turn down the heat to avoid burning the pancakes). Cook on one side until lightly brown, then flip and cook on other side until brown.

Note: If your family has egg intolerances as well, you can substitute the egg by using 1 tbsp of chia seeds soaked in 2 oz of water for 5 minutes. The chia seeds act as a binder for the flour.

Italian Antioxidant Seasoning

  • Combine equal parts rosemary (ground), thyme, oregano and store in a glass jar for easy use in your food.
  • When adding spices into your dish, add a pinch or two with additional butter after sautéing onions. Do this before adding vegetables or meat.

 

Hot Ginger Tea for Colds and Digestion

  • Place12, ¼ inch slices of fresh ginger root in a quart of water.
  • Bring to a boil, remove from heat and cover.
  • Let the mixture sit, covered, for 20-30 minutes.
  • Strain into a clear glass jar and store in refrigerator for up to 3 days.
  • You can drink one cup of hot tea every other hour with illness.
  • Lemon juice, honey, and a pinch of cayenne pepper can be added if desired.

 

Warming Chai Masala for Digestive Support

  • 1/4 cup cardamom seeds
  • 20 cloves
  • 3 teaspoon fennel seeds
  • 1 teaspoon black peppercorns
  • 5 teaspoon ground ginger
  • 5 teaspoon ground cinnamon

Directions:

  • Grind everything except the ginger and cinnamon in a coffee grinder.
  • Add ginger and cinnamon powder to it and grind once more to mix.
  • Store in glass jar in a cool dark place. This stays fresh for about 6 months.
  • Use 1/4 tsp for one cup tea.
  • Boil water, add chai powder, cover, and steep for 20 minutes.
  • Add almond milk and honey as desired.

Healthy Hot Cocoa

  • Boil 1 cup of almond milk with 1 T cocoa powder (non alkalinized ideally), 1/4 teaspoon ground cinnamon, 1/8 teaspoon cayenne powder, and 2-3 drops almond extract.
  • Whisk to achieve smooth consistency.
  • Add a pinch of stevia or 1 Tablespoon honey.
